Stir-fries are fabulous family dinners. They’re based on nutrient-packed vegetables and, often, lean proteins that deliver lots of satisfaction for few calories. If you’re trying to lose weight, you can serve yourself a smaller portion of brown rice—or whole-wheat couscous, quinoa, take your pick—on the side, while your super-active spouse piles on carbs. Or vice versa. So stir up some excitement around dinner. Celebrate the Chinese New Year (watch for specials on Asian foods at your commissary in January)—or just the fact that your tasty meal is good for you too.

This eclectic stir-fry is a colorful combination of carrot, red bell pepper, corn and romaine lettuce. This recipe exemplifies how to stir-fry vegetables with different textures. The carrots, which are a “hard vegetable,” should be stir-fried for a minute before adding “medium-hard” vegetables like peppers or corn, which require slightly less cooking. Finally, add “soft or leafy vegetables” in the last 30 seconds to ensure all the vegetables achieve the same level of done­ness. Make sure the lettuce is dry—if it’s wet when you add it to the pan, it will steam the vegetables, making them mushy rather than keeping them crisp.
