Finding healthy meals that are quick and affordable is a tricky thing for any family—but when you’re feeding a crowd, as Penniah Hall—mom of seven—is, it’s even more challenging. Plus, with Penniah homeschooling the children, who range in age from 1 to 14, and her husband, Germaine, working as an Information Systems Technician, 2nd Class, in the U.S. Navy, everyone is busy. The Halls have just about an hour to get dinner ready and on the table each night.
To refresh the family’s repertoire, we suggested the Halls mix it up with two variations on classic family favorites: Sloppy Joes and a hearty chili, both ready in 45 minutes or less. Though kids’ serving sizes are smaller than adults’, the family will want to double these recipes to be sure there’s enough to go around. Plus, any leftovers are great for the next day’s lunch.
